Year 5 – VE Day Meringues

Here is a video with a recipe for VE day meringues. I will add a photo of the finished meringues later when they come out of the oven. Do have a think about the scientific reaction which is taking place when you whisk egg whites. What are they combining with? (Clue: it’s all around us). Is the change reversible or irreversible? Has something new been created?

The recipe is 3 egg whites and 175g of caster sugar.

Whisk egg whites until stiff.

Whisk in the sugar a tablespoon at a time until it has dissolved and you have a glossy mixture with no grains.

Spoon onto a lined baking sheet – either 1 large pavlova or individual meringues. Bake at 140 degrees or Gas Mark 2 for an hour. Leave in the oven until completely cold.

Enjoy with cream and summer fruits. Remember you can make Eton Mess if the meringues break!
